Whether the ladies knew what they were doing when they started or not, by this edition (1964), they knew the drill. Where else can you find directions for skinning a squirrel (pp 453-4, between "Fricassee of rabbit," and "opossum") together with a description of their beloved Hungarian laundress making apple strudel (Neighborhood small fry gathered on the fringes of the light cast by the Tiffany dome, and their eyes would pop as she rolled the dough, no larger than a softball,into a big thin circle. Then , hands lightly clenched, palms down, working under the sheet of dough and from the center out, she stretched it ...[to a 2 yard square]...pp 598-9). Plus, this particular edition has one of my favorite bread recipes, inexplicably absent from later editions: Anadama bread, a heavy textured mix of cornmeal and flour seasoned with molasses and salt (p. 561). What's not to love? I ordered this one to replace my original, now held together with rubber bands.
